Litti Chokha: Great  Flavor of Bihar

If you are looking for recipe of litti chokha then your at right place. It consists of two main components: Litti and Chokha. Litti is a round, wheat flour ball stuffed with a flavorful mixture, while Chokha is a spicy and smoky vegetable mash. Here’s a simple recipe to make Litti Chokha.

Ingredients for Litti :-

2 cups whole wheat flour
1 cup sattu (roasted gram flour)
2 tablespoons chopped onions
2 tablespoons chopped green chilies
1 tablespoon chopped garlic
1 tablespoon chopped ginger
1 teaspoon carom seeds (ajwain)
1 teaspoon nigella seeds (kalonji)
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
2 tablespoons mustard oil
Salt to taste
Water (as needed)

Ingredients for Chokha :-

3 large tomatoes
2 large eggplants (brinjals)
2 medium-sized onions
2-3 green chilies (adjust to your spice preference)
2 tablespoons chopped coriander leaves
1 tablespoon mustard oil
Salt to taste

Instructions for Litti Chokha :-

For Litti –

In a large mixing bowl, combine whole wheat flour, carom seeds, nigella seeds, turmeric powder, red chili powder, chopped onions, green chilies, garlic, ginger, mustard oil, and salt. Mix the ingredients well until the oil is well incorporated with the flour. Add some water and make a stiff dough. Preheat your oven to 180°C (356°F). Take a small portion of the dough and roll it into a small flat circle in the palm of your hands.

Place a spoonful of sattu mixture (prepared earlier) in the center of the circle. Bring the edges of the circle together and seal it properly, shaping it back into a ball. Repeat this process with the remaining dough and sattu mixture. Place the stuffed litti on a baking tray and bake them in the preheated oven for about 25-30 minutes until they are cooked and turn golden brown. You can also cook them over a medium flame on a tawa (griddle) with some ghee until they are cooked evenly.

For Chokha :

Wash the tomatoes and eggplants thoroughly. Roast them directly on a gas flame or in an oven until the skin is charred and the insides are soft. Alternatively, you can also grill them. Once roasted, let the tomatoes and eggplants cool for a few minutes. Then remove the charred skin and mash the pulp in a bowl. Finely chop the onions, green chilies, and coriander leaves. Mix them with the tomato and eggplant pulp.
Add mustard oil and salt to the mixture. Mix well. Chokha is ready.

Now serve it with some ghee on top for added flavor.
